Chili Baingan Recipe | How to make Chili Eggplant 

This Chili Baingan Recipe is inspired by Andhra Chili Chicken Recipe where chicken is cooked in the green chili paste / gravy. I like Andhra chili chicken. So , when I tried the that preparation and method with baingan, this was very different and very tasty baingan dish. 

Not to mention that it is a super chilly dish and super tasty too. I modified the Andhra Chilli Chicken recipe slightly to make the Chili Baingan dish. I did not use cloves, black cardamom and other whole spices to make chili baingan. I kept it simple.

I added a little mango powder and instead of green chili paste, I used chopped green chili. Green chilli paste also can be used in this dish but I thought it would need at least 4 - 5 green chilli to make a fine paste and that will make chili baingan super hot and not easy to eat also. 

I am not fond of red chili powder much so i skipped that in my recipe, but if one likes red chili powder, that also can be dded to make a chili gravy for chili baingan.

Ingredients for Chili Eggplant / Chili Baingan


  • Eggplants : 5 - 6
  • Green Chilli : 3- 4 (adjust as per the taste)
  • Chopped Onion : 1
  • Ginger Paste : 1 tsp
  • Garlic : 4 - 5 cloves (chopped)
  • Cumin Seeds : 1 tsp
  • Turmeric Powder : 1/2 tsp
  • Coriander Powder : 1/2 tsp
  • Garam Masala : 1/2 tsp
  • Asafoetida : 2 pinch
  • Mango Powder : 1/2 tsp
  • Salt to taste
  • Oil : 2 tbsp

  • How to make Chili Baingan / Chili Eggplant

    Wash and make vertical slits in the eggplants. Heat oil in a pan and add cumin seeds. Let the cumin seeds crackle and add chopped onion in it. When onion starts turning light pink in color, add chopped Green Chili.

    Now add dry spices and ginger paste. Add chopped garlic and cook until this masala is completely cooked. When the masala starts leaving the oil, it is cooked completely. Now add a cup of water. /mix the spices well and cook till the water is boiled.

    Now add the baingan in it. With the help of spoon, fill the slits in eggplants with the spice mix. Cover the pan and cook for 10 minutes on low flames. Stir occasionally. At 10 - 15 minutes baingan is half cooked. Now cover the pan again and it will take another 10 - 15 minutes to cook baingan completely.


    Chili Baingan is ready. Add garam masala now and garnish with chopped coriander leaves. Serve hot with chapati / naan / paratha.
