Lobia Palak Curry Recipe : Lobia / black eyed peas is cooked in pressure cooker, later mixed with onion tomato spicy mix along with palak / spinach curry.
Lobia / black eyed peas is a high fiber and high protein legume / dal. There are various indian recipes which use this black eyed peas.
Lobia can be found easily in markets. Lobia palak curry, Lobia Aloo sabzi, Lobia sandwich, lobia masala, lobia methi are few among the various lobia recipes. Lobia is good for lowering cholestrol, and that is why it should be consumed on regular basis.
Lobia should be always be soaked in water before using in recipe. By soaking lobia in water, we reduce time of cooking. For Lobia Palak curry, first, we should wash and soak lobia in water for at least 2 hours. Later pressure cook it till it is soft enough. It should be cooked for 2 - 3 whistles in pressure cooker.

Ingredients for Lobia Palak Curry
Wash and soak lobia in water for at least 2 hours. Pressure cook for 2 - 3 whistles.If lobia is soft enough to chew, then it is cooked else we should cook it more.
In a pan, add 2 cups water and bring it to boil on flames. Then add chopped spinach / palak leaves in it. Leave for 2 minutes. Drain the water from pan and pour normal or cold water on spinach leaves. Make a fine paste of the chopped leaves. Keep aside.
In a pan, heat oil. Leave cumin seeds in it and let crackle. Now add chopped onion in it. When onion becomes translucent, add dry spice turmeric powder, red chilli powder, coriander powder along with ginger garlic paste. Cook till raw smell of ginger garlic paste is gone.
Now add chopped tomatoes in it. Also add salt now. Cook till tomato is completely cooked and starts separating from oil.
Now add boiled lobia in it. Also add paste of spinach leaves. Add water if required. Cook on low flames for 3 - 4 minutes. Turn the flames off and sprinkle garam masala on it.
Lobia Palak Curry is ready. Serve it hot with chapati / rice, paratha, naan.
