Moong Dal halwa is a rajasthani sweet dish which is very popular in north india. Moong dal halwa is made with yellow split moong dal. Moong dal is generally made as a curry with tomato or as a tadka dal but the sweet dish made from moong dal is very unique and very tasty too.

Lentils / Dal, including moong dal , have been an integral part of Indian cuisine for thousands of years. Lentils were a staple food due to their nutritional value, affordability, and versatility in cooking.

During the medieval period in India, various sweet dishes gained popularity, especially among the royal courts and aristocracy. Halwa, was one of those delicacies. It became prevalent during this time. Recipes for different types of halwa, including moong dal halwa, were refined and passed down through generations.

Different regions of India have their own versions of halwa, often made with locally available ingredients. Moong dal halwa is particularly associated with North Indian cuisine, specially Rajasthan, where it is a popular dessert served during festivals, weddings, and other special occasions.

In Indian culture, sweets are often associated with celebrations, joy, and hospitality. Moong dal halwa, with its rich and indulgent flavor, became a symbol of festivity and warmth in Indian households. Over time, the recipe for moong dal halwa has evolved, with variations in ingredients and cooking techniques. While the basic components remain the same—moong dal, ghee, sugar, and nuts—different chefs and home cooks add their own twists to the recipe, incorporating spices like cardamom, saffron, or even garnishing with edible silver leaf (varak) for added elegance.

Moong dal halwa has gained popularity not only in India but also internationally, thanks to the spread of Indian cuisine worldwide. It is often served in Indian restaurants and is cherished by food enthusiasts for its unique taste and texture.

Moong dal halwa is mostly prepared during winters in North India. It is like other halwa recipes. Because it is made of moong dal and not some flour, it has one extra step for halwa recipe.

To make moong dal halwa, it should be soaked in water for enough time so that it can make a smooth and thick paste. In this recipe, I have used water to make moong dal halwa but we can replace water with milk also.

Wash and soak moong dal in water for 4 hours. later drain water from it, now we should grind it to make a fine paste. When we add moong dal in grinder / mixer / blender, we should not add water in it. First grind it without any water, later if it is required , add small quantity of water.

Moong dal paste should not be watery, infect it should be thick paste.

Heat ghee in heavy bottomed pan or kadahi / wok, pour moong dal paste in it. Keep mixing and stirring on medium flames. We should stir the ghee and moong dal mix continuously else the paste will stick in bottom.

While cooking moong dal in ghee, it starts crumbling. Keep stirring continuously till ghee starts separating from moong dal. It takes around 8 minutes for moong dal paste to crumble and separate from ghee.

While we stir moong dal, we can make sugar syrup as it does not need much involvement. In a pan, mix sugar and cardamom powder in water. Keep on medium flames and let the sugar dissolve completely.

When sugar syrup is ready and moong dal paste is already separating from ghee, pour sugar syrup slowly in crumbled moong dal. Keep stirring continuously and cook it on low flames.  Below pictures are before adding sugar syrup and after adding sugar syrup.

Cook on low flames till water is absorbed completely and moong dal halwa starts seprating from the pan.

Moong dal halwa is ready. garnish it with chopped almond.
