Egg Roast Recipe

Roast Masala

The blend of roast spices used in Kerala cuisine varies from recipe to recipe, but there are some common spices that are often used to create the signature flavors of Kerala roasts. These spices typically include black pepper, coriander, cumin, turmeric, cinnamon, cloves, cardamom, fennel Seeds, curry leaves and mustard seeds.

These spices are typically toasted and ground together to create a fragrant and flavorful spice blend that is then used to marinate meats, seafood, or vegetables before roasting. The proportions of each spice can vary depending on personal taste and the specific recipe being prepared.

Ingredients for Egg Roast

  • Boiled Eggs : 5 -6
  • Onion : 1 big (finely chopped)
  • Tomato  : 3 medium (chopped)
  • Garlic : 1 tbsp (chopped)
  • Black Peppercorn : 6 - 8
  • Fennel Seeds : 1/2 tsp
  • Mustard Seeds : 1 tsp
  • Curry Leaves : 1 sprig
  • Cloves : 4 - 5
  • Turmeric Powder : 1/4 tsp
  • Coriander Powder : 1 tsp
  • Cumin Powder : 1 tsp
  • Cinnamon Powder  : 1/2 tsp
  • Red Chilli Powder : 1/2 tsp (adjust to taste)
  • Salt to taste
  • Oil : 1 + 1/2 tbsp
  • Ginger Paste : 1 tbsp

How to make Egg Roast 

In a kadai / wok / frying pan, heat oil. When oil is medium hot, leave black peppercorn, fennel seeds and other whole spice in it. Also add mustard seeds in it and let it splutter. 



When the mustard seeds splutter and spices leave a good aroma, add chopped garlic and onion in it. Fry till the onion is light pink in color. 



Now add curry leaves in it. Also add ginger garlic paste in it. Cook till the raw smell of ginger garlic paste is gone.


Now add turmeric powder, red chilli powder, coriander powder and other spices powder in it. Stir and cook on low / medium flames. Cook till raw smell of spices is gone.  Now add chopped tomatoes in it. Add salt as well. 


Cook till tomato is mushy and leave the raw smell. Now add boiled eggs in it. Mix well and cover the pan to cook further for 2 - 3 minutes on low flames.


Egg Roast is ready. Serve it hot with idiyappam as they do in kerala :) or just have it with rice / chapati / paratha.
