Puda Recipe | How to make Puda | Poora Recipe
Puda or Poora is sweet flatbread made using whole wheat flour , jaggery powder and fennel seeds (saunf). Puda is mostly prepared as an offering in prayers and is a very traditional form of Indian sweets. Specially in North indian states Uttar Pradesh, Haryana and Punjab, Puda or Poora is a very commonly made sweet.
Puda is shallow fried pancake . Pancakes are very close to Puda, just that Pancakes are prepared using egg. Puda can also be deep fried. The same batter is deep fried in smaller portions and popularly known as Gulgula.
In the authentic recipe of Puda, there is no baking powder added but I prefer to add baking powder to make puda crispy. I add shallow fried dry fruits in the batter to make puda but that also is optional. Also Puda can be made using sugar but traditional recipe suggests jaggery powder or jaggery. In case you wish to replace jaggery with sugar, for 1 cup of Wheat flour, 1/4 cup of sugar should be added.

How to make Puda
To make Puda using whole wheat flour is the best way. Maida or refined flour is also used but to keep it a bit on healthy side, using whole wheat flour is better. In a bowl, mix whole wheat flour, dry fruits, baking powder and fennel seeds. Add Jaggery Powder in it.
Make the batter of runny consistency. Heat a tawa / griddle / frying pan and sprinkle some ghee on it. Now spread a ladle full batter on it.
Cook on low flames. When bubbles appear on it, flip the side. Cook both the sides evenly until it turns golden brown.
Puda is ready. Serve it hot .
