Tomato Chokha or Tomato Bharta is a dish prepared using roasted tomatoes. Tomato Chokha comes from Bihar and eastern part of Uttar Pradesh. Litti Chokha from Bihar is popular worldwide. Sattu stuffed Litti is served with chokha recipes either it be Tomato Chokha, Potato Chokha (Aloo ka Chokha) or Eggplant Chokha (Baingan ka Chokha).

Chokha is served with Litti. Roasted tomatoes are crushed and garnished with mustard oil and chopped onion and green chilli. It is a flavorful delicious dish.
What about Tomato Chokha
Chokha means roasted vegetable mashe and mixed with few other chopped veggies. Chokha can be spicy or mild spicy. It is one's choice how do they want the Chokha to be. It is very simple and easy to make Tomato Chokha. Only time taken in roasting the tomatoes. Roasting can be done in Oven or on flames. I mostly roast tomatoes on flames. It adds a char to the tomatoes.

How to make Tomato Chokha (Step clicks and details)
First wash tomatoes and wipe. Make small cuts with knife. Do not make big cuts else the juice of tomatoes will go waste. Making small cuts is important. Now apply oil on skin of tomatoes.
Roast tomatoes on fire. Keep roasting on medium fire till skin tears and burns. It takes around 12 -15 minutes. While cooking on fire, we should keep checking and turning tomatoes so that it is evenly roasted from all sides. When tomatoes are roasted, keep aside till it is at room temperature. If you wish, you can bake tomatoes for chokha.
Keep roasted tomatoes aside. Let it cool down a bit as it will be very hot to touch now. When tomato is at room temperature, peel the skin of tomatoes. Chop or grate tomatoes. It can be grounded in mixture as well. Mashing it with hands is also good. It will leave some chunks of tomato in chokha.
Mix chopped onion, green chilli and chopped coriander leaves.
Now add grated ginger in it. Add salt to taste. If you like raw garlic, you can crush or grate 2 garlic cloves in it.
If you have not added raw crushed garlic, it can be added after slight cooking as well. Now heat mustard oil lightly. We do not have to smoke the oil as we often do while cooking gravy. Chokha has to have the rawness of mustard.
When oil is hot, leave chopped garlic in it. Cook till garlic becomes golden brown in color.
Add fried garlic in it. Mix well. Also add lemon juice in it. Mix well again.
Tomato chokha is ready. Serve it with litti or parathas.
