Puran Poli recipe | How to make Puran Poli | Obattu Recipe

Puran Poli is a very famous flat bread from Maharashtra cuisine. Puran Poli is a sweet dal stuffed paratha. For stuffing Chana Dal is used and to make paratha, refined flour / maida is used.

Puran Poli is known by different names in different states of india. It is called "Vedami" in Gujarat, Bobattu in Telugu, Obattu in Karnataka and boli in Tamil Nadu. The recipe also differs a little bit. In Gujarat, Vedami is prepared using Tuvar dal where as in other states it is prepared using Chana Dal. 

Puran Poli is a festival food which is often prepared on Ganesh Chaturthi. This sweet flat bread is simple and easy to do. Whether it is prepared using chana dal or tuvar dal, rest all steps remain same. While preparing stuffing, chana dal is cooked and then mixed with jaggery. In this recipe, I have added cardamom powder and fennel seeds to add more flavor to it. We can also add nutmeg powder, ginger powder and a bit of black pepper corn powder as well. It is as per the personal preferences to add additional flavor. Here is the complete recipe for Puran Poli.

Ingredients for Puran Poli / Obattu

  • Chana Dal : 1 cup 
  • Refined Flour / Maida : 1 cup
  • Wheat Flour : 1/2 cup
  • Salt : 1 pinch
  • Jaggery Powder / Sugar : 1/4 cup
  • Cardamom Powder : 1/4 tsp
  • Fennel Seeds : 1 tsp
  • Ghee : 2 tbsp (to make dough)

    In a big bowl, mix wheat flour, maida / refined flour, salt and 1 tablespoon ghee. Mix the ingredients thoroughly. Now add little water at a time to knead a soft and smooth dough. Now add rest of the ghee and knead dough again. It takes around 5 - 7 minutes to make a soft and smooth dough. Keep the dough covered with a cloth for 10 - 15 minutes. 

    Wash and soak chana dal in water for 30 minutes. later drain water, add dal in pressure cooker along with 1 + 1/2 cup water. Pressure cook it for 3 - 4 whistles. Let the pressure cooker release steam itself.

    Now take the cooked chana dal from pressure cooker and strain the water from it. In a grinder, make a fine paste of cooked chana dal. If required, add some water to make paste. Chana dal paste should not be watery, infect it should be a thick paste.

    Now heat 1 tsp ghee in a pan. Leave fennel seeds in it. Fry for few seconds. Now add chana dal paste and mix well. Add cardamom powder and powdered jaggery or sugar. Stir continuously so that the mix does not stick to the pan. Keep stirring till jaggery powder or sugar is dissolved completely and becomes dry. Keep it aside for cooling.

    Now divide the dough into lemon size balls. Also divide the chana dal stuffing into small round portions. Roll the dough and place chana dal stuffing at center. 


    Pull the outer edges towards center to seal the stuffing in it. Roll or press with fingers to increase the size to make it like a chapati.

    Heat a tawa and place the rolled puran poli on it. Flip the side once it starts changing color from bottom. Apply ghee and again flip the side. Apply ghee on this side as well and cook puran poli evenly till brown spots appear. Puran Poli is ready. Keep it aside. Repeat the process for rest of the dough.

    Once Puran Poli is ready, garnish with ghee and serve hot.
