Egg Korma is a creamy and nutty flavored dish. Originally Korma is a mutton dish but the flavored and thick gravy makes it impossible not to try. Even if your an eggetarian or vegetarian, you can very well have your version of korma along with the favorite vegetable or egg. Here I have prepared this dish with eggs and I have prepared the same Korma gravy for paneer and some other vegetarian dishes.  

Korma is a special gravy which is prepared using yogurt and nuts. Few people make korma only using yogurt, few use onion tomato paste along with yogurt. We can opt for any of this. This recipe of Egg Korma is done using onion tomato paste and yogurt along with nuts. 

Cashew brings a thickness and creaminess in the gravy and forma Korma, cashew is one of the best thing to add. If you are not a cashew fan, you can opt out.

We should soak cashew in water or milk and then make a fine paste of it. We can also use a mix of nuts like cashew, almond, poppy seeds and sesame seeds. In this recipe cashew and sesame seeds are used to make a nutty paste to be used for korma gravy.

Korma gravy has many versions and variations. Other popular korma recipes are paneer korma, mutton korma, chicken korma, mushroom korma. We can make mix veg korma as well. Mix veg korma is also known as Navratan korma.

Recipe Details : Egg Korma / Kurma (2- 3 servings)

Ingredients for Egg Korma / Kurma

  • Boiled Eggs : 4
  • Onion :  1 (chopped)
  • Tomato : 1 (finely chopped)
  • Green Chili : 2 (finely chopped)
  • Ginger : 1/2 inch 
  • Garlic : 4 - 5 cloves
  • Salt to taste
  • Cumin Seeds : 1 tsp
  • Coriander Powder : 1 tsp
  • Red Chili Powder : 1/2 tsp
  • Turmeric Powder : 1/4 tsp
  • Bay Leaf : 1
  • Cloves : 4 -5
  • Black Pepper Corn : 1 tsp
  • Cinnamon : 1 inch stick
  • Beaten Yogurt : 1/4 cup
  • Cashew : 7 - 10
  • Sesame Seeds : 1 tsp
  • Oil/ Ghee : 1 tbsp.
  • How to make Egg Korma / Kurma

    In a bowl, soak sesame seeds and cashews in water for 10 minutes. Later make a fine paste and keep aside. 

    Chop onion, tomato, green chili, ginger and garlic. Make a fine paste.

    In a cooking pan, heat oil. Leave black peppercorn, bay leaf, cinnamon and cloves in it.  

    Now leave cumin seeds in it and let it crackle. Add all the dry spices powder green chili, turmeric and coriander powder in it. Cook till raw smell of spices is gone. 

    Now add tomato, onion green chilli, ginger and garlic paste in it. Cook till oil starts separating from the paste. Add sesame seeds and cashew paste. Stir occasionally. 

    Add beaten yogurt now. Mix well and stir for a minute continuously. Add salt now. Cook for 3 - 4 minutes on low flames. Now add boiled and diced eggs in it. Cover the eggs in gravy and cook for a while on low flames. Within 3 - 4 minutes it will be ready.  Sprinkle some fresh coriander or kasoori methi and let it sit for 5 minutes under a cover.

    Egg Korma / Kurma is ready. Serve it hot with chapati / paratha / naan and rice.
