Chettinad cuisine comes from a region "Chettinad" in Sivaganga district in Tamilnadu. Chettiars , people from Chettinad region have been the traders of salt and spices. Chettinad Cuisine exhibit that very well. Chettinad cuisine has a special chettinad masala used in most curries which is very aromatic and amazingly flavorful. Chettinad Masala powder is specially prepared for the curries. This spice powder is a mix of many spices.
Chettinad spice powder is prepared using various whole spices. In this recipe, I have prepared chettinad spice powder which is later used to make gravy. Chettinad spice powder can be prepared in large quantity and can be stored in air-tight container for weeks. If you are not going to use it often you can store it in refrigerator as well.
Mushroom Chettinad is a preparation where Mushroom is cooked in Chettinad spicy gravy. The same gravy can be used to make various other chettinad recipes with different veg and non veg options. Chicken Chettinad is a very famous dish among chicken lovers. Egg also goes very well with Chettinad gravy.

How to make Mushroom Chettinad (step clicks and recipe details)
In a pan, dry roast green cardamom, cloves, peppercorn, red chili and cinnamon stick. Add coriander seeds, cumin seeds, fennel seeds and roast it till get spicy aroma. Now add coconut powder in it. Roast all the ingredients till it is light brown in color.
Now keep the roasted spices aside till it becomes a bit easy to handle. Grind all the roasted spices to make a paste. First just make a coarse grind and then add 2 to 3 tablespoon water to give it a paste consistency. This chettinad spice paste will be used to make gravy.
Now heat oil in a pan. Leave mustard seeds in it. Let the mustard seeds crackle.
Add chopped onion in it. Fry till onion starts becoming golden in color. Add ginger garlic paste in it. Cook till raw smell of ginger and garlic is gone completely.
Now add dry spices turmeric, red chili powder and dry curry leaves. Adding red chili powder is optional as we have already added whole red chili in roasted spices. If you want to have the spicy gravy add red chili powder. I have added Kashmiri red chili which is not spicy but adds red color to the gravy.
Also adding curry leaves is optional. If curry leaves are available, please add else curry leaves can be skipped.
Now add chopped tomato and salt in it. Cook till tomato is completely mushy and starts separating from the oil. Now add Chettinad spice paste in it. Mix well and cook further for 2 minutes on low / medium flames.
Now add diced mushroom in it. Cover the pan and cook for 4 - 5 minutes on medium flames. Mushroom releases water while getting cooked. Stir often to avoid sticking the gravy in the bottom of pan. Mushroom takes 8 - 10 minutes to cook completely. Turn the flames off when mushroom is completely cooked.
Mushroom Chettinad is ready. Serve it hot with chapati / paratha / naan / rice.
