How to make Aloo Gobhi Masala (Step clicks and details)
To make Aloo Gobi Masala, wash tomatoes and chop roughly. Make a fine paste in a grinder. Keep aside. We will be using this tomato paste later in Aloo Gobi Masala recipe when potato and cauliflower is partly fried.
In a pan, heat oil. When oil is medium hot, leave cumin seeds in it. Let cumin seeds crackle.
Now add crushed coriander seeds in it. Fry it for a while. Add chopped onion. Cook till onion becomes translucent.
Now add turmeric powder and garam masala.
Also add Kashmiri chili powder. Stir. Add chopped green chili in it.
Also ginger garlic paste and cook till raw smell of ginger garlic paste is gone. Now add cubed potato in it. Also add salt and stir. Add 1 tbsp water and let potato cook for 5 minutes on medium flames.
Now add cauliflower florets. Stir well. Cook cauliflower florets also for another 5 minutes.
Now add tomato paste in it. Mix well and cook covered. Add 2 to 3 tablespoon water in it. You can adjust the amount of water as per you preferences. If you want a thin curry, add more water. 1/4 cup water will make a semi gravy kind aloo gobhi masala.
Cook for 8 - 10 minutes in a covered pan. Check if potato is soft and can be pressed with spoon. If potato is soft enough, turn the flames off.
Now add kasoori methi in it.
Also add fresh chopped coriander in it. Aloo Gobi Masala is ready now.
Aloo Gobi masala is ready. Serve it hot with chapati / naan / paratha / rice.
