Wash and peel potatoes and cut them into medium size cubes. Keep in water so that potato cubes do not turn brown.

In a bowl, add gram flour. In this, add carom seeds, salt, mango powder, garam masala, turmeric powder, coriander powder, asafoetida and red chilli powder. Add little water at a time and keep mixing with a fork or beater to make a smooth paste. Make batter of medium thick consistency. The batter should not be runny and should not be very thick also. When we dip potato cubes, batter should stay on that.

Now add potato cubes in it. Dip them well in the batter so that potato cubes are well coated in batter.

Now heat oil in a kadahi or deep cooking pan. When oil is medium hot, it is ready to fry pakode. To test the oil, we should leave a drop of batter in it. If the drop comes on the surface , it is ready.

Leave the coated potato cubes in hot oil from the sides of pan. Deep fry till turn golden brown. Drain the excess oil and keep aside on a soaking paper to absorb extra oil.

Aloo ke pakode is ready. Serve hot and crisp pakode with ketchup or chutney.
