Mushroom Biryani Recipe | how to make Mushroom Biryani | Khumb Biryani 

Mushroom Biryani Recipe : Mushroom is cooked in a mix of spices along with tomato and onion. Layered with cooked rice.

Mushroom is a quick cooked vegetable. Also good on a healthy note. It is easy to include mushroom in our daily diet in forms of curries and biryani.  

Mushroom is a low calorie food and a good source of vitamin B and other essential minerals. There are loads of recipes which can be prepared using mushroom. Mushroom Biryani is just one of them, other recipes with mushroom are mushroom makhni, mushroom chettinad, mushroom masala, mushroom pulao, mushroom pakode, mushroom manchurian etc..

Here is the complete recipe for mushroom biryani. 

Ingredients for Muahroom Biryani

  • Mushroom : 250 gm
  • Rice : 1 cup
  • Onion : 1 (finely chopped)
  • Cashews : 1 tbsp
  • Bay Leaf : 1
  • Cloves : 4 - 5
  • Black Pepper Corn : 7 - 8
  • Mint Leaves : 1 tbsp (chopped)
  • Sugar : 1/2 tsp
  • Salt to taste
  • Ginger  : 1/2 inch (grated)
  • Green Chilli : 2 (finely chopped)
  • Ghee : 1 + 1/2 tbsp
  • Cumin Seeds : 1 tsp
  • Green Cardamom : 2 - 3
  • Cinnamon : 1 inch stick
  • How to make Mushroom Biryani

    Wash and rinse rice in water till the water is clean. Soak rice in water and keep aside for 30 minutes.

    Heat 1/2 tbsp ghee in a pan. Fry cashews and keep aside. Now in same ghee, fry 1/2 of chopped onion till it turns golden brown. When onion is fried to golden brown, drain excess ghee and keep aside in a plate.

    .Drain water from soaked rice. In a pressure cooker, add 1 + 1/2 cups of water and soaked rice. Cook for one whistle and release the pressure by removing weight from cooker lid. Keep the cooker open.

    While rice is cooking, heat rest of the ghee in pan. Leave bay leaf, cloves, black peppercorn and cumin seeds in it. Allow the cumin seeds to crackle.

    Now leave chopped onion in it. Fry it till onion becomes light pink in color.  Now add grated ginger in it.  Cook till raw smell of ginger is gone.

    Now add diced mushroom and green chilli in it. Fry for a minute on low flames. Also add dry spices turmeric powder, coriander powder and red chilli powder. Cook for few seconds till the raw smell of dry spices is gone. Stir frequently. Add salt.

    Now add beaten yogurt in it. Mix and stir. Cook for 2 - 3 minute on low flames or till mushroom is completely cooked. Add sugar now.

    Now layer the cooked rice on it. Put golden fried onion and cashews on the top of rice layer. Cover the pan tight and cook on low flames for 2 - 3 minute. Check when rice is completely cooked. Turn off flames.

    Mix lightly with a broad spatula so that rice do not break. Mushroom Biryani is ready. Serve it hot with choice of raita.
