Weekdays mornings our kitchens are busy in making paratha and packing it for school or offices. Children love to eat paratha in lunchbox at school and it is the most appropriate way to keep their tiny bellies full and keep them energized. Carrot Onion paratha ticks all the checkboxes to be a healthy and nutritious lunchbox food. Apart from busy weekdays morning, weekend mornings will give chance to have hot carrot onion paratha and enjoy it with flavored ginger tea ! In case, you are not a tea person, raita and pickles are always there to boost the taste.

This recipe of Carrot Onion Paratha is a morning recipe as it is quick and easy to follow. Stuffed Parathas need more preparations and takes more time to cook, so on a busy morning an easy and quick recipe is a must. In this recipe recipe, carrot and onion are not used as a stuffing , instead imixed in flour and then kneaded into it. Carrot Onion Parathas are a little sweeter depending on kind of carrot is used. Indian red carrots are sweeter in taste as compared to orange colored carrots. Onion in this recipe gives an additional crunch to the paratha.

Like other parathas, carrot paratha is also prepared with wheat flour dough. Grated carrot is mixed with wheat flour while kneading the dough. Now my favorite part here is that trying combinations of vegetables in parathas is interesting.  Carrot goes well with many other veggies. Carrot Methi paratha is kids' favorite in my home.

Ingredients for Carrot Onion Paratha:

  • Carrot : 1 cup (grated)
  • Onion : 1 (finely chopped)
  • Salt to taste
  • Coriander Powder : 1 tsp
  • Kashmiri Red Chili Powder : 1/2 tsp
  • Ginger : 1 tsp (grated)
  • Fresh Coriander Leaves : 1/4 cup
  • Wheat Flour : 1 + 1/2 cup
  • Water to knead dough
  • Oil : to cook paratha

    For Carrot Paratha, in a bowl, mix fine grated carrot with chopped onion, salt, coriander powder and red chili powder. I have added kashmiri red chili powder in this recipe. If you want to use the regular red chili powder, please reduce the quantity or adjust as per the taste. Also, Green chili can be used instead of red chili powder to make carrot paratha.

    Now add chopped ginger and fresh chopped coriander leaves in it. Also add wheat flour in it. 

    Mix all the ingredients well. Now add some water in it to knead dough. Add little quantity of water at a time and knead the dough smooth. Once dough is ready, let it rest for 10 minutes. If you want to make crispy parathas, please add ghee while kneading the dough. Adding ghee makes parathas crisp. 

    Divide the dough into small portions and roll each portion just like chapati. You can adjust the thickness of chapati / paratha. Meanwhile heat a tawa / griddle. Put the rolled chapati on it. Cook it evenly from both sides. Flip the side to cook chapati even from both sides.

    Now apply ghee / oil on it and cook both the sides evenly till brown spots start appearing on it. Flip the sides to cook both sides even. Carrot Paratha is ready. Repeat the process for rest of the dough.

    Carrot Onion Paratha is ready. Serve it hot with tea / raita or pickle.
